Watch out for Cinnamon!

I decided to do a small 3 gallon batch to experiment with, basically a brown ale with a bit of fresh ground cinnamon. And damn I hardly used any cinnamon and the brew is over powering! It's been in the bottle for about 3 weeks now, hopefully after I give it a month or 2 to condition it will mellow out a bit.

    Oh no. I've got a pumpkin wine and a flower mead perking, and spiced porter I just bottled, and I used cinnamon sticks in all three brews. I hope the effect you got was because of the fresh-ground aspect? I used sticks so I wouldn't have to triple-strain, but now I'm hoping it mitigated the spice effect (which was supposed to be subtle). Please post how the ale eventually turns out...

      I've done some meads with sticks and not fresh ground. The sticks do much for the flavor without gettin' crazy. You should be fine unless you stuck a whole tree in there.

      Good luck and tell me how the pumpkin wine turns out!

    I don't know if this is applicable or not....

    This is also second hand information and not first hand knowledge, so please take this with a grain/pinch/barrel of salt...

    I've been warned about the use of cinnamon in brewing, as many "grocery store" varieties of cinnamon are actually something else heavily dosed with cassia oil. Most oils are bad for fermentation and brewing, so if you do use any cinnamon, make sure you are getting the real deal, and not the fake stuff dosed with flaboured oils... IIRC this is more of an issue with cinnamon sticks than with the powdered variety, but it could be both....

      Good to know! I used organic sticks ordered on-line for the brews, but I've had weird problems using cheap store-bought sticks in mulls before, which that might explain.

        you have to buy real Cinnamomum verum, as most of what you find in stores is Cassia, a cheaper cousin.

        Btw, do you guys ever use nutmeg, allspice, star anise or cardamon ?

          I've used nutmeg in a holiday ale once. Unfortunately I mis-read the ingredients list of the recipe and added too much of it. It did mellow after an extra few months of aging though.

          I've not brewed myself with Cardamon, but it is a favoured adjunct in many Weisbiers, which I love, particularily in the summer as a refreshing beer.

          I brewed up something that in theory would taste similar to an alcoholic root beer...using star anise, nutmeg, cardamom, vanilla beans, mint (for lack of evergreen) and some others I don't remember. It was very odd, to say the least. I bottled it using a little more vanilla extract, which helped to mellow it a bit, but it was still strange. Fermented well though- it was my first time trying to use barley malt syrup like honey in a mead.

    I used powdered cinnamon, the real stuff, for a pumplin ale. I didn't use much more than a couple of tablespoons for a 5-gal batch. I essentially spiced it to taste before the fermentation commenced. It came out with a very subtle cinnamon flavor. Remember, though, it had EKG and Cascade hops to contend with, also. If I can find my notes for that batch, I will let you know the exact amount used.
